Lachocologue, Victoire Finaz [RECIPE] – Chocolate Mousse

The secret to a perfect chocolate mousse is choosing delicious chocolate. This recipe has been made using our 70% Nativo chocolate. However, you can also prepare it with any of our options from the Baking & Cooking category.
Ingredients:
- 200 g dark chocolate (at least 60% cacao)
- 40 g salted butter
- 6 eggs
- 1 tbsp muscovado or brown sugar
- 40 g dark chocolate, finely chopped into shavings
Preparation:
- Melt the chocolate with the butter over very low heat. Set aside and let it cool.
- Separate egg whites from yolks. Mix the yolks with the sugar. This is the key step! Pour the yolks over the melted chocolate in the center. Using a wooden spoon or spatula, mix gently in the center to create an emulsion, like mayonnaise. The chocolate will gradually thicken—this is the magic!
- Whisk the egg whites until stiff peaks form and gently fold them into the chocolate mixture. Add the finely chopped chocolate shavings for extra indulgence. Refrigerate for at least 2 hours. Take out 15 minutes before serving. Enjoy!
